Introduction

I had a craving for broiled salmon and avocados at the same time, so I thought I'd put them both on raw spinach. And then I heard someone say red onions...and my mouth started to water! A salad was born!!

I loved the flavors so much, I didn't add a salad dressing, but feel free to add whatever kind you like!

Ingredients

    3 cups raw spinach leaves
    2 salmon fillets (approx. 3 oz each)
    1/4 red onion, sliced very thin
    1/2 Hass avocado, diced
    2 tsp lemon juice

Directions

Season the salmon fillets with a tiny pinch of salt and a sprinkle of black pepper. Broil for about 5 minutes (until salmon flakes when pierced with a fork).
Meanwhile, pour half of lemon juice onto the avocado to prevent it from browning. Place spinach, onions, and avocado on plate. When salmon is done, remove from the broiler and sprinkle a little lemon juice on the salmon. Place the salmon fillets on top of the salad. Sprinkle the remaining lemon juice over the entire salad.
