Ingredients

    4 eggs or 1 Cup Egg Beaters
    1/4 Fresh or Frozen Corn Kernels
    4 Tlbs Goat Cheese
    2 Tlbs Skim Milk
    1 Tlbs Chopped Chives
    Cooking Spray or Olive Oli
    Salt and Pepper to Taste

Directions

Beat Eggs, Milk and Salt & Pepper to taste and set aside.

Crumble 4 Tlbs Goat Cheese.
Chop 1 Tlbs Chives.

Combine 3 Tbls Goat Cheese with 1/2 Tbls Chives and set the rest aside for garnish.

Spray large skillet with cooking spray or 1 tsp Olive oil. Heat pan to medium.

Add Corn Kernels and heat 2-3 minutes. Add Egg over Corn and swirl pan til bottom is well coated. When Eggs have firmed but still have some liquid add Chives and Goat Cheese to one half of the Egg. When Egg mixture starts to pull away from sides of pan fold half of Eggs over the Goat Cheese and Chives. Cook 2-4 minutes or until done. Remove Omlet from pan and garnish with remaining Goat Cheese and Chives.
