Introduction

No cook, quick pickles. Adds color and flavor to tuna/chicken/egg salad w/o adding lots of calories.
Serving size based on 1/4 Cup.
6 slices (approx) = 1/4 Cup.

Ingredients

    2 cans of sliced beets, drained
    1/4 Cup Splenda (or other no cal sweetener)
    2 Cups vinegar (white or cider)
    5 whole cloves
    1/4 t cinnamon


Directions

In a lidded jar that will hold 2 cans of beets, put in the drained beets.
Add the Splenda.
Add the vinegar and shake the jar.
Sample the brine to test the balance between sweet/tart that suits your taste. Adjust to your palate.
Add the spices to your taste.
Return the lid to the jar & shake well.
Put the jar in the fridge for at least 1 hour--overnight is better.
