A simple, delicious pasta that uses the absorption method (similar to risotto). The starch on the pasta makes a wonderfully creamy sauce. Ingredients

100 grams (3.5 ounces) penne pasta, uncooked
1 tbsp olive oil
1/4 onion, chopped
2 cloves garlic, minced
1 cup vegetable stock (or chicken broth)
5 button mushrooms, sliced
2 cups fresh spinach, washed and dried
salt and pepper to taste
Directions
1. In a small saucepan, begin heating the vegetable stock.
2. In a medium saucepan, sauté the onion and garlic in the olive oil until softened. Add the dried pasta to the pan and stir to coat.
3. When the vegetable stock begins to boil, add it to the pasta. Stir contents, cover, and let simmer for 5 minutes.
4. Add the sliced mushrooms to the pot, along with salt and pepper. Stir and cover. Continue simmering until pasta is almost al dente (about 7-10 minutes).
5. Add the spinach and stir until the leaves are barely wilted and the pasta is al dente. Serve immediately.
