Ingredients

    1 pkg jello vanilla pudding mix, fat free, sugar free
    1/2 cup 1% milk
    1 5 oz can pumpkin
    1 tsp pumpkin pie seasoning
    1/2 cup westsoy low fat plain soy milk
    8 Trader Joe's triple ginger snaps
    1 tbsp walnuts, chopped
    whipped topping, 2 tbsp

Directions

Mix pudding and milk until dissolved, cook over low heat until bubbly and thick, stirring often. Remove from heat and fold in pumpkin and pumpkin pie seasoning.
In each of 4 parfait glasses, place one ginger snap on the bottom. Spoon pumpkin mix over the cookie. Crush the other four cookies with walnuts and sprinkle over the top. Refrigerate. Put 1/2 tbsp whipped topping on each and serve.
