Introduction

Easy casserole for two. Easy casserole for two.
Number of Servings: 2

Ingredients

    2 slices of 35 calorie bread

    2 eggs
    1/2 cup lowfat cottage cheese
    1 tbsp of skim milk

    1/4 cup canned mushrooms
    2 tbsp diced onions
    2 tbsp diced red bell pepper
    1 tsp garlic
    1tsp basil
    1/4 diced canned tomato (italian seasoned are great)
    2 slices canadian bacon

Directions

Place bread slices in casserole dish. Place one slice of Canadian bacon on each slice of bread.

Dice then saute onion, pepper, mushrooms, garlic and basil.

Place the above ingrediants over the bread slices. Then spread the tomatoes on the bread.

Mix the cottage cheese, eggs, and a dash of milk then pour over the bread and toppings. Add a dash of salt and pepper if desired.

Bake at 350 for approximately 25-35 minutes. Can be prepared the night before and stored in the fridge. This can be made with or without any of the 'topping' ingredients. Great with just veggies, or if you switch the Canadian bacon to sausage (but that adds more fat). Very filling!

When making it for two I put it in a bread pan, if making it for a group you can adjust the recipe and make it in a larger dish.
