Introduction
My version of this indian inspired desert, with 1/3 the calories and fat! My version of this indian inspired desert, with 1/3 the calories and fat!Number of Servings: 4
Ingredients

1.5 T margarine
1/2 c. long grain rice (basmati)
1/4 t. cardimom
1/4 t. cinnamon
2 1/2 c fat free milk
2 T sugar/splenda cooking blend
(honey and pistachios if desired..changes fat and calories!)
Directions
In a saucepan, melt the margarine at medium heat. Add rice, cardamom, cinnamon and stir to coat the rice. Add milk and sugar/splenda and bring to boil. Reduce heat, cover and let simmer, stirring often, 25 to 30 minutes or until almost all liquid has absorbed and rice is tender. (You can prepare this step in advance, let cool and put in an hermetic container. It will be good up to the next day in the fridge). Serve the rice pudding warm, sprinkle with pistachios and honey if desired.
