Introduction

I was just hungry one day and wanted to make a healthy "vegetarian" meal. I started adding stuff together and before I knew it I had created my own recipe! Ingredients

    2 tbsp olive oil
    1 whole green pepper
    1 whole red pepper
    1 medium onion
    1 shallot
    1 can diced tomatoes (drain)
    1 can black beans (drain)
    1 can white beans (drain)
    1 can of corn
    3 medium sized potatoes
    1 tbsp cayenne pepper
    1 tbsp mexican chili powder

    (Salt & pepper can be adjusted to taste.)

Directions

You'll need a big pot.
Cover bottom of pot with olive oil.

Dice up the peppers & onions & potatoes.
Throw them in first (potatoes take the longest to cook.) Then dice up the shallot and put that in the pot as well.

Then after draining each can,
Add the diced tomatoes & corn.

After the pot as started to simmer and the potatoes seem to be tender enough add both cans of beans.

Once all the ingredients have been added you may season your stew as you'd like.

For me I added the cayenne pepper, then the chili powder and added 1 tbsp of salt & 1 tbsp of pepper. But that's just me you may of course, add your own flavoring.
