Number of Servings: 4

Ingredients

    4 boneless chicken breasts
    1 tsp. cumin
    1 tsp. chili powder
    couple shakes Franks Red Hot
    1 Tbsp. Extra Virgin Olive Oil
    1/2 med. onion, chopped
    2 cloves garlic, minced
    1- 15 oz. can blackbeans
    6 Tbsp. smokey BBQ sauce
    6 scallions, chopped



Directions

Rub raw chicken with cumin, chili powder adn Franks Red Hot. Heat griddle to high. Cook 5 min. each side, or until cooked through.

While Chicken is cooking, heat skillet over med. heat. Add 1 Tbsp EVOO- add onions and garlic. Cook 5 min. Add beans & BBQ sauce. Chop cooked chicken, and add to BBQ/bean mixture. Add chili & cumin powder to taste.

Serve as a burrito, or alone. Also make a great salad or baked potato topping.
Make 4 servings.

    We really liked this. I cooked my chicken in the crock pot beforehand so that I could shred it verses having chunks and then continued with the rest of the recipe. Didn't use oil, substituted non stick spray to cut down on fat. Will make again! - 2/12/09

    Oh my stars! This is an amazing dish! If you've ever had the Southwest Eggrolls from Chili's or Dick Clark's ... THESE are BETTER and WAY healthier! You've got to try these!!!! It's become one of our favorite quick meals. - 12/22/08

    Incredible!
    Very good and easy! I used lettuce leaves as wraps instead of tortillas and it was very tasty. I used the left overs in a salad the next day with salsa--also yummy :) - 11/5/08
