Ingredients

1 package ground turkey (Jennie O, Butterball, etc)
3 packets of pre-cooked chicken breast strips (such as Oscar Meyer, Hormel)
1 can refried beans
1 jar salsa
1 can black beans
1 pack of tortillas (medium sized, can use whole wheat or regular)
½ white onion
1 jalapeño pepper
1 red pepper
1 large can tomato sauce (largest size available, on bottom shelf)
1-2 packages of Reduced Fat Mexican Cheese (depends how much you like cheese!)
1 container Fat Free sour cream
Pam
9X12 pan
1 large deep sauce pan
1 large sauce pan
1 medium pot
Directions
Preheat oven to 350.
Dice onion, jalapeno and red pepper.
Brown onion/peppers in large deep sauce pan.
Brown turkey in another large sauce pan, then add chicken.
While turkey/chicken is cooking, take medium pot, add salsa and refried beans, and warm.
Add chicken/turkey to onion/pepper mixture (in the deep pan).
Add tomato sauce to turkey/chicken/onion/pepper mixture and heat (just enough to warm tomato sauce) - careful on how much tomato sauce to add so that it doesnt get too watery - you wont need the full can of tomato sauce.
Add black beans to mixture (make sure to drain as you pour from can, again, dont want mixture to be too watery).
Layering process in baking pan can begin:
Spray bottom of pan with Pam.
Very bottom layer should be tortillas - may need to tear tortillas to fit to pan.
Spread refried bean/salsa mix on tortillas.
Spread turkey/chicken/onion/pepper/tomato sauce/black bean mixture on top of refried bean/salsa mix (use slotted spoon so liquid drains before adding to pan).
Sprinkle cheese on top of turkey/chicken/onion/pepper/tomato sauce/black bean mix.
Layer again with tortillas, and repeat layering process until pan is full.
Very top layer should be tortillas (you can sprinkle cheese on top of tortillas if you'd like).
Bake for 45 minutes at 350. Serve with sour cream on side.
