Introduction

Ingredients

    15oz Pumpkin, canned, without salt,(approx 2 cup)

    Betty Crocker Super Moist Spice Cake Mix (Dry mix )

    Applesauce, unsweetened, 1/3 cup

    1 tsp baking powder

    Water, tap, 1 cup

    Egg, fresh, 3 large eggs

    OPTIONAL~ 5 oz Hershey's Cinnamon Chips (half bag) ~ adds 30 cals per muffin

    OPTIONAL~ Cream Cheese Frosting ~ adds appox. 40 cals per muffin

Directions

Pre-heat oven to 350F for metal or glass pans & 325F for dark or nonstick pans. Grease pan or use paper baking cups (I find these are better with out the paper wrappers).

Beat cake mix, baking powder, water, applesauce, eggs & pumpkin in a large bowl on low speed for 30 seconds, then on medium speed for 2 minutes, scraping bowl occasionally. This is time to STIR in the optional cinnamon chips.

Pour into pan muffin pans approx 2/3 full.

Bake for 20-25 minutes or until tooth pick inserted in center comes out clean. Cool for 10 minutes before removing from pan.

Makes approx 24 muffins.

Variations... for a healthy cup cake, simply frost these with cream cheese frosting! You can also make a 13" X 9" cake as well, just takes adjusting to the baking time... normally 31-36 minutes.
