Ingredients

    1 tbsp olive oil
    onion, 1 medium, chopped
    garlic, 2 tsp
    Chili powder, 1 tbsp
    Cumin , 1 tbsp
    Barley, pearled, 1/2 cup
    Canned Tomatoes, 411 grams
    Sweet Corn, Fresh, 1 cup
    Chickpeas (garbanzo beans), 439 grams,
    Beans, red kidney, 439 grams,
    Vegetable Broth, 2 cup
    Jalapeno pepper, chopped 1/4 cup


Directions

1.In a large pan heat olive oil and add onion and garlic and cooked for a couple of minutes until soft.

2. Add the chili and cumin and stir until combined.

3. Add all the remaining ingredients to the pan and bring to a boil; cover and reduce heat to low. Simmer for 20 min. stirring occasionally add more water/broth if necessary until the barley is tender.

serve with grated cheese, crushed tortilla chips or sour cream
