Introduction

Ingredients

4 slices of smoked bacon (cut into small pieces)
1 Large onion (cut into strips)
1 Medium head of cabbage (cut into long thin strips)
3 cloves garlic (mashed)
1 tsp. salt
1/2 tsp. black pepper
12 oz bag of whole wheat yolk-less wide egg noodles
Directions
Cut onion and cabbage into long strips.
Cook whole wheat egg noodles until tender but not too soft..
In a large deep skillet or pan, render the fat over medium low heat from 4 strips of smoked bacon that have been cut into small pieces. Reserve the bacon bits, which will be added back before serving.
Saute the cabbage and onions, which should be shredded or cut into long thin strips. until glossy and tender. Towards the end add the mashed garlic, salt, pepper and paprika. Mix and saute a few more minutes.
Add drained egg noodles and mix well. Add bacon bits if desired. Leave on heat to until some of the noodle moisture is removed, stirring often.
Makes 6-8 side servings.
