Introduction

Number of Servings: 18

Ingredients

    1+1/2 cups cooked cool quinoa
    1/3 cup melted butter
    1 cup sugar
    2 eggs
    1 vanilla pod
    1 cup gluten free flour, including xanthan and raising agent
    1/2 cup buttermilk

    Topping
    Raspberry jam
    Flaked coconut
    Finely chopped pecans

Directions

Preheat the oven to 170 degrees (325)
Beat the butter, sugar and eggs together.
Mix in the buttermilk and vanilla.
Stir in the quinoa and gf flour - if the mix is too stiff, add more buttermilk [this depends on your gluten free flour mix]
I bake in individual slice moulds which takes around 20 -30 minutes, until springy on top.

Cool, then preheat the grill.
Spread each slice with raspberry jam and then sprinkle the chopped pecans and flaked coconuts on top.
Grill until the coconut is golden brown.

    So I may have used 1 tsp vanilla extract instead of a "pod" and skimped on the butter and sugar (I always do), and fine, I used regular milk in leau of buttermilke, and then baked in one big flat layer on a cookie pan and skipped the grilling and topping steps, but these were good!

    To get 1-1/2 c. cooked quinoa you start with 1/2 cup dry (2 servings). This will bring your calories in line if the tracker knows you are using 1/2 c. quinoa and only making 2 servings. Otherwise the tracker thinks 18 servings is 1/4 c. x 18 which expands 3 times which gives you 13+ c cooked quinoa. - 9/10/12

    Thank you! The recipe is actually calculated using 1/4c. dry. In real world application, I make this into smaller pieces, and use about 1/2 as much sugar.
    They're not low call, but they're pretty high in protein and satisfy those intense cravings often experienced by those who are new to a GF diet
