Ingredients

16 oz. dry black beans
1 Green Pepper, chopped
1 Onion, chopped
salt, at least 1 tsp, more if needed
pepper, 1 Tsp.
2 Chicken breast, boneless, skinless (can still be frozen)
Directions
Makes at least 8 servings.
Night before soak the beans in a pan with water at least 2 inches above the beans. In morning rinse and drain beans. Add to the crockpot and put enough water to cover the beans. Add pepper, onion, salt and pepper and Chicken. Cook on high all day at least 8-10 hours. May need to add more water throughout the day. Serve with rice, lettuce and tomatoes. If you want a thicker consistency, mash the beans. The chicken will be so tender it will fall apart. If there is any leftovers put in refrigerator and use as a filler for taco salad or enchildas, etc.
