Ingredients

    16 oz. dry black beans
    1 Green Pepper, chopped
    1 Onion, chopped
    salt, at least 1 tsp, more if needed
    pepper, 1 Tsp.
    2 Chicken breast, boneless, skinless (can still be frozen)

Directions

Makes at least 8 servings.

Night before soak the beans in a pan with water at least 2 inches above the beans. In morning rinse and drain beans. Add to the crockpot and put enough water to cover the beans. Add pepper, onion, salt and pepper and Chicken. Cook on high all day at least 8-10 hours. May need to add more water throughout the day. Serve with rice, lettuce and tomatoes. If you want a thicker consistency, mash the beans. The chicken will be so tender it will fall apart. If there is any leftovers put in refrigerator and use as a filler for taco salad or enchildas, etc.

    This was VERY easy to make. My first experience with dried beans. I used chicken broth instead of water and added some extra spices (lime, basil & thyme combo). It was delicious. My DH and daughter loved it, too. - 1/13/09

    This might be a good recipe but these are NOT brazilian beans, I'm brazilian and we would never mix peppers and chicken with beans, the recipe for black beans is called Feijoada e it takes pieces of pork and sausage, a special sausage that we don't have abroad... - 9/8/12
