Ingredients

    Eggplant, fresh, 1 cup, cubes
    Sweet Red Pepers, fresh, 1cup, cubes
    Zucchini fresh, 1 cup, cubes
    Red Tomatoes, fres, 1 cup, cubes
    Onions raw, 1 cup, chopped
    Exra Light Olive Oil, 1 tbsp
    White Wine, 1/2 glass

Directions

1. Preheat the oil in a boiler.

2. Add onion and cook about 2 minutes or until tender.

3. Add Sweet Red Pepper and cook for another 2 minutes.

4. Add eggplant, zucchini and tomato. Mixture occasionally. Increase heat to medium-high.

5. Add wine and cook uncover till alcohol evaporates.

6.Cover and cook 5 more minutes or until tender.

You can either serve it warm or cold. Spanish people enjoy this recipe several times a week. It's a classic.

    I'm currently living in Spain, and we eat Pisto a lot for dinner here. I can't wait to try cooking it myself when I get back! Looks good :) - 2/6/10

    O.K.
    This didn't work for me. It was very plain and I ended up turning it into ratatouille, which WAS good. I stir fried the mixture for about 10 more minutes after adding salt, pepper, about 1teas. lemon juice and 1 teas. dried basil. I wish I had some fresh basil! This version was good. - 3/28/08

    Incredible!
    This was so easy and several people that don't like eggplant liked it as well. A great way to use those summer garden vegetables! I added salt and pepper to it. - 7/19/07
