This didn't work for me. It was very plain and I ended up turning it into ratatouille, which WAS good. I stir fried the mixture for about 10 more minutes after adding salt, pepper, about 1teas. lemon juice and 1 teas. dried basil. I wish I had some fresh basil! This version was good.
This was so easy and several people that don't like eggplant liked it as well. A great way to use those summer garden vegetables! I added salt and pepper to it.
