Ingredients

    1 lb of sirloin steak
    3 red potatoes
    1 tbsp cumin powder
    3 cloves of garlic
    3 roma or regular tomatoes
    3 chile de arbol (dry red peppers)
    2 cilantro sprigs
    Salt to taste

Directions

Boil tomatoes, peppers, and garlic cloves for about 10 minutes. Next cut up red potatoes in cubes and boil till a bit soft, but not too soft. While that is cooking, go ahead and cut sirloin (salt to taste) in small pieces (smaller than a stir fry) and cook in pan with no oil yet and cut off once done. Finally add tomatoes, peppers, garlic cloves and remaining spices to blender while adding about 2 cups of water used to boil items. Let cool, once cooled down, blend and salt to taste.

Once the potatoes are done, add canola oil to sirloin and heat up. Next add the potatoes to saute together. Finally add blender sauce and simmer for 15-20 minutes. Serves about 8.
