Ingredients

    Extra virgin olive oil....twice around the pot
    1 pound pork sirloin chops, cut into thin strips
    3 cloves of garlic, sliced
    1 onion, sliced
    4 carrots, cut into matchsticks
    2 heads cabbage, cored shredded/sliced
    1 green pepper, seeded and cit into strips
    1 red pepper, seeded and cut into strips
    2 tbsp ground ginger, eyeball it...more or less to taste
    soy sauce to taste
    salt and pepper to taste.

Directions

Heat LARGE pot with olive oil (twice around the pan) on medium high heat

while the pan heats, peel and slice garlic and onion. toss garlic and onion into pan and cut the pork into thin strips. add the pork strips to the garlic and onion and sautee until the pork is thoroughly cooked...season with salt and pepper.

while the pork cooks, slice the carrots, cabbage, and peppers. Add to pan. add ginger and hit it with the soy sauce several times.

cover the pot with a lid and let it hang out, on medium heat, for about 20 minutes, mixing the ingredients occasionally.

Cook longer for softer vegetables, shorter time for crunchier veggies.

serve warm, topped with more pepper, ginger, and soy sauce to taste...careful with the say sauce it IS salty
