Ingredients

    15 ounces red beans, rinsed and drained
    14.5 ounces diced tomatoes
    1 cup dry instant brown rice
    3/4 cup salsa
    1 cup water
    1 tsp ground cumin
    1/2 tsp ground oregano
    1/2 tsp salt

Directions

Place all ingredients in a pan, except cheese. Bring to a boil and simmer, covered for 5 minutes. Stir. Let simmer on low for an additional 5 minutes. Add cheese and cover and allow to melt.
Makes 4 1 1/2 cup servings.
