Ingredients

    - 1/4 cup olive oil
    - 2 large red onions, finely chopped
    - 4 medium carrots, grated
    - 1 tsp Herbes de Provence (a spice mix)
    - 3 cups vegetable broth
    - 1 cup dry du Puy or green lentils, rinsed
    - 1 28oz can diced tomatoes, with juice
    - 1/4 cup fresh parsley, chopped
    - 1/4 cup red wine
    - Salt and pepper, to taste
    - Swiss or sharp cheddar cheese, grated (to serve)



Directions

1. In a large pot or Dutch oven, cook the onions and carrots in the olive oil, over medium heat, 3 to 5 minutes.

2. Add the spices, stock, lentils and tomatoes and bring to a simmer.

3. Lower heat, cover and simmer 45 minutes, until lentils are tender.

4. Add red wine and parsley.

5. To serve, ladle into bowls and top with a bit of grated cheese.

6. Enjoy!
