Ingredients

2 cups of wild rice, cooked
1 lb of 97% fat free ground turkey meat
1 large purple onion, chopped
3 garlic cloves, minced
1 large zucchini, chopped
1 cup of mushrooms, sliced or pieces
1 large yellow squash, chopped
1 -1 ½ cups of carrots chopped
1 bay leaf (opt)
1 can of Healthy Request Condensed Cream of Celery by Campbell’s Soup
1 can of tomatoes past
8 cups of water
pepper to taste
1 large tomato chopped
Directions
Have the Rice already cooked.
In a large cooking pot on medium high heat, brown the turkey meat with onions, and garlic.
Once turkey meat is brown, add zucchini, squash, mushrooms, carrots, bay leaf and water. Bring to a boil.
Add rice.
Bring down heat to a simmer.
Then add the can of soup and tomatoes past and pepper to taste. Add chopped tomato.
Let simmer for 10-20 min. ( the longer it simmers the better the bay leaf seasons the soup)
Makes about 18 cups (serving size is a cup and a half) or 12 servings
