Ingredients

1 cup whole-wheat flour
1 teaspoon baking powder
1/2 cup unpacked brown sugar, packed
1/2 cup uncooked quick oats
15 pieces dried apricot halves, diced
2 tablespoons sunflower seeds
2 tablespoons pepita seeds
1 tablespoon reduced-calorie margarine or butter, melted
2 eggs
Directions
1. Preheat oven to 180ºC
2. Coat an 8-inch square baking pan with cooking spray (or use a sheet of baking paper).
3. Whisk together flour, baking powder, sugar, oats, apricots, sunflower seeds and pepita’s.
4. Whisk together margarine and eggs.
5. Quickly mix together wet and dry ingredients.
6. Spoon into prepared pan and smooth top.
7. Bake until firm, about 20 minutes.
8. Cool completely before cutting into 10 rectangles.
9. Yields 1 bar per serving.
