Ingredients

1 Tbsp Olive or Canola Oil, 1 tbsp
1 Medium Sized Onions
2 Cloves Garlic
1 lb Roast Pork, lean
2 cups Cooked Brown Rice, long grain
4 cups Vegetable Stock or Broth
1 Package Frozen Peas & Carrots Peas
Favorite Salt Free Seasoning
Lite Soy Sauce
Directions
Makes 6 - 1 cup Servings
1. In a large pot add Vegetable stock or broth and bring to a boil.
2. Add 2 cups brown rice, cover with a tight lid and sinner until tender, aprox 40 mins.
3. Dice Onion & Garlic, set aside
2. Shred Pork, set aside.
3. Heat a large pan or dutch oven, add Oil, Onion, & Garlic, saute until clear in color.
4. Add Pork, season with any salt free seasoning if needed.
5. Add Veggies and cook until tender.
6. When rice is cool add to meat mixture & stir until well blended.
8. Add soy sauce to taste
(note: this will bring up the sodium content)
9. Enjoy!
