Introduction
This makes a small loaf, so feel free to double the batch if you are unsure about halving an egg. Bake a double batch in a 12" x 6" pan for 45-50 minutes. Ingredients
-
3/4 cup room temperature water
2 tbsp melted butter
1/2 large egg
2 1/2 cups All-purpose flour
1/4 cup dried potato flakes
3 tbsp sugar
1 tsp salt
1 1/2 tsp instant yeast
Directions
1) Set your breadmaker to the 'dough' setting (or fit your mixer/food processor with a dough hook) Add the water, butter, and egg. Top with flour, potato flakes, sugar, and salt. Make a small indention in the top of the dry ingredients and fill with the yeast.
2) Let the bread knead and then rise for 1 1/2 hour. (If your breadmaker's dough setting normally includes some rising time, check your book to see the amount. I need to add another 20 minutes after the timer)
3) Shape the dough into an oval and place in a 5" x 9" baking pan. Using a knife, cut the loaf in half vertically, almost to the bottom of the pan. Cover with lightly greased plastic wrap and let the loaf rise until 1" above the edge of the pan (about an hour or two).
4) Bake the bread at 350 F for 30-35 minutes, until golden brown.
