    Ingredients:


    *Edamame, shelled, fresh, 0.5 cup (remove)
    Tofu, firm, 0.5 cup (remove)
    Onions, raw, 0.5 cup, chopped (remove)
    Mushrooms, fresh, 0.5 cup, pieces or slices (remove)
    Olive Oil, 2 tbsp (remove)

Directions

Press and slice tofu in 1/2" chunks. Heat oil in wok or large skillet, sautee tofu for 3-4 minutes while you chop mushrooms and onions. Add mushrooms and onions, sautee for another 2-3 minutes. Add edamame beans last (do not over cook edamame) makes four servings. Add mixture to your favorite stir-fry rice or asian noodles, etc. Yum, yum!
