Ingredients

20 saltine crackers, finely crushed
3 tbsp 1% milk
1 tbsp firmly packed brown sugar
1 tbsp honey
1/3 cup flour
2 1/2 tbsp butter, diced
1/3 cup boiling water
1/4 tsp instant espresso powder
1/4 tsp baking soda
2 1/2 tbsp corn syrup
1 1/2 tbsp molasses
1/2 tsp vanilla
pinch ground cinnamon
Directions
Preheat oven to 350F, lightly grease a 6" pie plate.
Combine cracker crumbs, milk, sugar and honey until a damp, sticky mixture forms. Press into pie plate.
Bake 15 minutes.
Cut butter into flour to an even crumbly texture.
In a separate large bowl, stir together boiling water and espresso powder.
Stir in baking soda, corn syrup, molasses, vanilla, and cinnamon, whisk well to combine.
Spread flour crumble mixture onto hot baked crust and immediately pour molasses mixture over crumble – do not stir together.
Bake 40 minutes, until just set (when jiggled, it will still seem a little fluid).
Let chill overnight before serving.
