Introduction

My mom always called this Hamburger soup, but I've left some extra tomato sauce out and made it a chili. Low cal, high fiber and protein and it gets better every day! Ingredients

    1 lb ground beef
    2 tsp taco seasoning (or to taste)
    1 large or 2 small cans pinto beans, rinsed
    1 small can diced green chiles
    1 can corn (don't drain)
    1 large can diced tomatoes
    1 cup shredded carrots

Directions

Cook the hamburger, drain, add the taco seasoning to your liking, plus a bit of water and simmer about 5 minutes. Dump your hamburger, canned tomatoes, canned pinto beans (rinse these first!), canned corn (don't drain these), diced green chiles and shredded carrots (these are for color and a bit more nutrition; optional) in your crock pot and cook on low for 3 or 4 hours, or high for 6 or 7 until everything is bubbly and the flavors have had a chance to mingle. Salt and pepper to taste when you're ready to serve. A little cheese or sour cream on top is really good, but not necessary. Makes around 12 1-cup servings. If you want a "soup" just add some tomato sauce to the mix. It's great on a cold day with crackers or warm bread. Enjoy!
