Ingredients

    1.5 lb chicken breast, cut into bite sized pieces
    2 cans mushrooms, drained
    2 jars capers, drained
    2 small jars marinaded artichoke hearts, drained
    juice from 1 lemon (or more if desired)
    .5 cup Smart Balance
    .5 cup Extra Virgin Olive Oil
    1 Tbsp mince garlic
    dash salt, pepper and paprika
    3 cups uncooked whole wheat pasta

Directions

Heat butter and Olive Oil, medium heat. Add mushrooms, capers, salt, pepper and paprika. Bring to a boil. Add chicken and artichoke hearts. Simmer, stirring occasionally, for 30 minutes. Serve over whole wheat pasta.
