Ingredients

Egg, fresh, 2 large
Pepper, black, 0.50 tsp
Basil, 2 tbsp
Olive Oil, 0.33 cup
Olive Oil, 3 tbsp
Garlic, 3 cloves
White Rice, medium grain, 3 cup (prepared)
Asiago Cheese, 5 oz
Prosciutto, 4 oz
Directions
Basil Aioli:
Combine 1/3 cup of Olive Oil, garlic, and basil in small bowl. Refrigerate.
Rice Cakes:
Combine rice, cheese, eggs, prosciutto, and pepper in large bowl, mix well. Heat 2 tsp. olive oil over medium heat. Scoop 1.5 tbsp. of rice mixture in hot oil. Sauté 2-3 minutes until golden brown. Turn and press lightly with a spatula. Sauté on second side for 2-3 minutes. Place rice cakes on baking sheet and keep warm in a 250 degree oven. Continue with rice mixture, using additional oil if needed. Serve warm with basil aioli. Makes 24 appetizers.
