My own rendition of Arby's chicken salad My own rendition of Arby's chicken salad
Number of Servings: 3

Ingredients

    1 large can of chicken, drained
    1/8 C chopped walnuts
    1/4 C seedless grapes, diced
    1/4 C apples, diced
    2 oz fat free vanilla yogurt


Directions

Mix all ingredients together and serve on salad, flatbread, pita, wrap, etc.

    This was so delicious! I didn't expect yogurt and chicken to be a good combo, but it is.

    Made a few changes. Added 1/4 c of diced cantaloupe, 1/2 c quartered strawberries, and an additional 2 oz. of yogurt. Also used 5 oz. of grilled chicken instead of canned chicken.

    Incredible!
    I made this a little different using ingredients I had on hand. Since I didn't have any grapes, so those were skipped and substituted dried cranberries. Kept the rest, and wrapped it all up in a whole wheat tortilla and a slice of swiss cheese warmed on the tortilla. Yummy! - 12/31/17

    I make this for any festival my organization hosts, so I leave the nuts out for that because of all the folks with allergies. It still always does well.

    Great combination! And extra fruit to boot! , but if, like me, you use chicken made and spiced for a different recipe, ummm.. be careful. LOL! I will make this again with PLAIN chicken :) - 5/7/11
