Two reasons Why I made this.

I was tired of the same old same old for breakfast and I am not big on cottage cheese. So came up with to give life to my taste buds.

Number of Servings: 6

Ingredients

    1 Egg
    2 Egg white
    3/4 cup Egg substitute
    1 1/2 cups Spinach, frozen,
    1 small Onion chopped
    1/2 cup Peppers, sweet, red, chopped
    1/4 Sun Dried Tomatoes chopped finely
    3/4 cups Cottage Cheese, Nonfat,
    2 tbsp Parmesan Cheese, grated
    1 garlic cloved sliced
    1/2 tsp Salt or to taste
    1/4 Pepper, black,
    1 tbsp hurb of your choice
    1 tsp spice of your choice

Directions

Cook onions and peppers in a small skillit for about 8 min then add sun dried tomato cook for 2 more mins. Add frozen spinch cook until thawed.
Put garlic , egg, egg whites and eggs subsitute in to a food prossesure puls on low for about 20 seconds then add half and half puls for 5 sec
add cottage and parm cheese puls for about 20 or more secouds unit smoth. Add 1/4 of the cooked vegtables and the salt and pepper and the spice or hurb of you choice puls for about 20
don't over prosses beacuse you don't want the mixture to turn green. When done mix the eggs and the rest of the cooked vegtables together
pure in to a greesed 8x8 backing dish cover with tinfoil back 350*F for about 15 min thenremove tin foil cook for about 20-30 min until light brown around eddges and set in the middle.
