Adaptation of recipe from Jasper White's Cooking from New England Adaptation of recipe from Jasper White's Cooking from New England
Number of Servings: 4

Ingredients

    1/4 lb bacon diced
    large onion diced
    1 apple diced
    2 small or 1 large head red cabbage cored and chopped
    1 C raspberry, cider, or red wine vinegar
    1/2 C brown sugar - not packed
    1 medium baking potato peeled and shredded

Directions

Dice and Crisp Bacon
When Bacon Begins to brown - add diced onion cook until soft - about 5 minutes. Add apples, diced, Cabbage - cored and chopped, water, vinegar and brown sugar. Bring to a boil while stirring. Cover pot and put in oven at 350 for 1 hour. Once cabbage is tender, grate raw potato into pot. cook 4-5 mins. more over med. heat until potato has dissolved into braising liquid.
