Number of Servings: 4

Ingredients

    4 Cups chicken broth
    1/2 pound cooked chicken breast
    1 1/2 cups diced potatoes
    1 cup sliced carrots
    1 cup sliced zucchini
    1 cup chopped broccoli
    2 plum or roma tomatos, chopped
    2 stalks celery, chopped
    1 medium onion, chopped
    1/2 green pepper, chopped
    1 jalepeno pepper, chopped or
    couple dashed cayenne (optional but best)
    2 cloves garlic, minced
    1/4 cup peanut butter
    salt and pepper to taste

Directions

In a large pot, combine broth, potatoes, carrots, onion, celery and garlic. Bring to a boil and simmer 5 minutes, or until vegetables are nearly tender. Add chicken, peppers, tomatos, zucchini and broccoli and simmer 2 minutes more or until vegetables are done to your liking. Add peanut butter and seasonings and bring just to a boil. Adjust seasoning and enjoy.
