Ingredients

3 c. water
2 c. white,brown.wild rice blend
1/4 c. orange juice
2 Tbsp. apple-cider vinegar
2 Tbsp reduced-sodium soy sauce
2 tsp. Honey
1 tsp. Asian(dark) sesame oil
1 c. dried cranberries
1/2 c. chopped Scallions
3 oz. dried peaches, thinly sliced
1.4 c. pecans, toasted, chopped
Directions
Makes 8 3/4 cup servings
1. Bring water to boil in a large saucepan. Add the rice blend and return to boil, Reduce heat and simmer, covered, until the rice is tender and the liquid is absorbed., about 20 mins. Spread rice on a baking sheet and let cool. to room temp., about 20 mins.
2. Meanwhile, combine the orange juice, vinager,soysauce, honey, and sesame oil in a large bowl, beating with a whisk until blended.
3. Stir rice and the remaining ingedients; toss well to coat. Serve at once or cover and let stand at room temp. up to 2 hours
