Introduction

This main dish salad is nice for a summer day when it's too hot to cook. This main dish salad is nice for a summer day when it's too hot to cook.
Number of Servings: 6

Ingredients

    8 oz. pasta, cooked
    1 can (14.75 oz.) pink salmon, drained, bones and skin removed
    2 c. cherry tomatoes, quartered
    2 c. cucumber with peel, coarsely chopped
    1 medium red onion, thinly sliced
    1/2 c. olive oil
    1/3 c. lemon juice
    1/2 Tbsp. dill weed
    1 garlic clove, minced
    3/4 tsp. salt
    1/4 tsp. pepper

Directions

In large bowl, toss pasta, salmon and vegetables together. Combine oil, lemon juice, dill, garlic, salt and pepper; mix well and pour over salad, tossing gently to coat. Refrigerate overnight. Makes 6 2-cup servings.
