Introduction

Ingredients

4 small/medium or 2 large red grapefruits (Rio Stars are great)
8 seedless clementines (can substitute tangerines or tangelos but remove the seeds)
1 fresh pomegranate, peeled and seeds removed and rinsed (discard the rind/peel)
Directions
Peel the clementines and slice in half across the sections, then separate the individual sections. Put in a large (2qt) glass or porcelain bowl. Cut the skins off the grapefruits with a sharp knife, cutting through the membrane on the outside of the sections. Use the knife to cut the juicy fruit out from between each section, cut each section into thirds and add to the bowl with the clementines. When you have removed all the fruit, squeeze the leftover membrane over the bowl to get all the remaining juice out. Add the pomegranate seeds and mix. Serve chilled, makes a great dessert after roast meat or chicken, also good with fish or as a side dish for brunch.
