Introduction

Redid the Pumpkin Banana Oatmeal muffins that are on my recipe book, but used a few different ingredients... Redid the Pumpkin Banana Oatmeal muffins that are on my recipe book, but used a few different ingredients...
Number of Servings: 16

Ingredients

    2 cups pumpkin, mashed/pureed
    1 large banana, mashed
    3/4 cup egg whites
    1 1/3 cups powdered milk
    4 tsp pumpkin spice
    1/2 c sugar
    3/4 c wheat flour
    1/2 c oatmeal (I used old fashioned)
    3/4 cups raisins or cranberries (they have the same amount of calories)
    1/4 cup sunbutter (My daughter is allergic to peanut butter, so you can substitute, if you wish)
    2 tsp baking soda
    2 tsp vanilla

Directions

Mix all wet ingredients (including pumpkin and banana).
Add peanut or sunbutter.
Mix in powdered milk.
Add oatmeal.
Add flour and soda.
Add raisins.

Bake in muffin tins for 20-30 minutes. Makes 16 muffins.

    Very Good
    Quite nice, not bland at all with changes. I used 5 tsp p.pie spice, 3 whole eggs, extra Tbsp p.butter. Egg whites tend to make things bland and rubbery, egg yolks bring warmth of flavor and stability...and better nutrition. I substituted 1/4 C sugar with Lakanto (erythritol blend) - 10/16/10

    Good
    Oven temperature was not included. I baked mine at 350 degrees. The taste is good, a little bland. I used 2 whole eggs, added 2 scoops of protein powder and some chopped walnuts, substituted Splenda for the sugar and made them a little smaller, getting 19 from the recipe. Thanks AubreyJo! - 11/9/09
