Ingredients
-
-1 cup flour (whole wheat, or whole white wheat, or regular all-purpose)
-1 cup old fashion oats
-1/3 cup ground flax seed
-1 tsp. cinnamon
-1 tsp. baking soda
-1/2 tsp. baking powder
-1/4 tsp. salt
-1/2 cup brown sugar (not packed)
-1/2 cup milk (skim or 1%)
-1 egg
-2/3 cup applesauce (unsweetened)
Directions
Preheat oven to 400 F. Prep 12 muffin cups.
Mix all dry ingredients then add liquids. Mix just enough to get all ingredients wet. Pour into muffin cups and bake 15-20 minutes.
VARIATIONS
* Flax seed can be replaced by 3 Tbs. oil
** add nuts, dry friut, or sprinkle top with natural chocolate/cinnamon chips
*** use two egg whites instead of a whole egg
