Ingredients

1 cup chopped celery, 3 stalks
1 cup chopped onion, 3/4 large
2 cloves garlic
1 tbsp olive oil
1 49 oz can chicken broth low sodium
1 cup water
1/2 cup arborio
3 medium tomatoes
1 medium zucchini
1 bag baby spinch
1 15 oz can great northern beans
1/4 cup fresh thyme
black pepper
salt
Directions
1. In a dutch oven cook the celery, onion, and garlic in olive oil until tender.
2. Add broth, water, and uncooked rice. Bring to a boil. Cover and reduce to a simmer for 15 minutes.
3. Add chopped tomatoes, zucchini, spinich, beans, thyme, salt, and pepper.
4. Simmer until heated through and spinich is wilted.
Makes 9 (about 1 cup - 1 1/2 cup) 325g servings
Fridged 4 individual servings, reheated great.
Froze 5 individual servings.
