Introduction

A high protine bar that can be for a snack or breakfast. A high protine bar that can be for a snack or breakfast.
Number of Servings: 30

Ingredients

    2 1/2 cups whole-wheat flower
    1 1/2 cup uncooked Oats not instant
    1 tsp Cinnamon
    1/2 tsp Baking powder
    1/4 tsp salt
    1- cup cold butter (healthy heart type) I use Olive oil butter
    1/2 cup peanut butter if you like it.
    8 Tbs. Water (more if to dry after creaming together ingredients)
    2 tsp Vanilla
    1/2 cup walnuts chopped to size you like
    1/2 cup each of sunflower seeds, pumpkin seeds, flax seed,
    1/4 cup of sesame seeds
    1/2 cup. Raisons or (Cranberry raisons)
    1 1/2 cup Chopped dried prunes, and dried apricots mixed
    1 jar sugar free preserves of your choosing. I use Polaner, sugar free blackberry, raspberry or Strawberry


Directions

Combine all dry ingredients and mix well. Raisons go in with the dry ingredients. Mix water and vanilla together and set aside. Mix butter and peanut butter together and set aside, (a small food processor works well for this). Also in a food processor finely chop dried fruit (prunes and apricots). Put dried fruit, along with butter and peanut butter mixture, into the dry ingredients and cream them together until it is to thick to mix any more. Add the water and vanilla a little at a time and continue to mix until all ingredients are the consistency of play dough. The jar of preserves is to be used after the first baking. Press about 1/3 the mix into the bottom of a 9 x 13 in. pan. Bake at 375 for 12 to15 minutes. (Should be light brown at edges) Take out of oven and spread jar of preserve filling on the top. Cover with remaining dough mixture and pat down a little. Bake another 25 to 30 minutes. Cool, cut and serve. Makes about 30 1 inch squares.

It might be best to make a half batch for the first few times you try this because it takes time to get them just the way you like them. Add or subtract any ingredients you like. Note: If you like you can add about 10 packs or more of Splinda for sweetness to taste. However they are sweetened by the fruit and preserves.
