Ingredients

For the chicken:
1-2 Chicken Breasts, depending on size
2 tbsp Rosemary
1 tbsp Lemon Juice
2 cloves Garlic
salt, pepper to taste
For the spinach:
1 package fresh Spinach (10 oz)
2 cloves Garlic
1 tbsp Olive Oil
1 pinch Red Pepper Flakes
2 cups mashed potatoes
Directions
Preheat oven to 375 F (190 C). Cover the chicken breasts with garlic then sprinkle with rosemary, lemon juice and add salt and pepper to taste. Place in a 9x13 inch baking dish and bake in the preheated oven for about 25 minutes until chicken is done.
Trim and clean the spinach, cut into palm size pieces.
In a large pan, cook the garlic and red pepper in the olive oil over medium heat until the garlic is golden. Add the spinach and salt to taste. Stir well.
Cover the pot and cook until spinach is tender, just a few minutes.
Serve with mashed potatoes.
