Ingredients

    (2) 0.5 oz salmon fillets
    (3) lemons
    (2) Tbsp olive oil
    (3) sprigs of fresh dill
    1/2 cup of heavy whipping cream
    1/2 cup lite sour cream
    *salt & pepper to taste

Directions

Pre-heat oven to 350 degrees. Slice 2 lemons in thin slices (will be used to make a bed of lemons for salmon fillets, needs to cover entire bottom of 13"x9" baking pan). Lay thawed fillets on bed of lemons and pat in 1 Tbsp of olive oil and salt & pepper to taste then squeeze juice from half of third lemon on top. Bake in oven for 15-25 mins, until salmon is dark pink on outside and light pink on inside and flakes with fork. While salmon is cooking, make sauce- Add whipping cream and sour cream in bowl and stir until evenly mixed, add shredded sprigs of dill and stir until thickens, add 1-2 Tbsp of lemon juice and refrigerate until ready to serve. Sauce can be served on top of salmon or to the side.
Makes (2) 0.5 oz fillets of salmon, with accompanying sauce
