Ingredients

    1 cup brown rice uncooked
    1 cup onion raw and chopped
    1 cup green bell pepper raw and chopped
    1 cup cooked wheat berries (found at health food store and cooked prior to adding to pilaf)
    2 Tbsp EVOO
    2.5 cups fat free low sodium chicken broth
    1 cup shredded carrots

Directions

Saute onion, pepper and brown rice in EVOO. until brown rice is browned slightly, and onion is translucent. Add carrots. Add 2 .5 cups chicken broth and turn down heat to simmer. Add wheat berries toward the end of cooking. Cook until all broth is absorbed.

I was unable to find any information regarding nutrition of wheat berries...high fiber wheat product that can be cooked than frozen for future use. High fiber.
