Introduction

This is a light cake like scone. Goes great with a cup of java! This is a light cake like scone. Goes great with a cup of java!
Number of Servings: 8

Ingredients

    2 eggs
    1/4 cup skim or buttermilk
    2 tsp vanilla extract
    1/4 cup orange juice concentrate(frozen of, at room temp)
    1 cup white whole wheat flour
    1 tsp baking powder
    2tsp baking soda
    1/2 tsp salt
    1/4 cup chopped pecans(roasted)
    2 tablespoons splenda (6 small packets)




Directions

Place nuts on cookie sheet, brown in 4oo degree oven for about 5 min. Set aside. Cream the butter, add beaten eggs, milk, extract , add orange zest, and frozen concentrated orange juice. Set aside.
Mix dry ingredients and slowly add the wet ingredient mixture til it forms a sticky dough.
Shape in disk, with floured hands and place on greased cookie sheet.
cut disk in 8 pie sized pieces(I use a floured pizza cutter) Do not separate pieces.
Bake in 400 degree over for about 30-40 min til golden brown and comes out clean.
