Ingredients

    1/4 cup butter, divided
    1 medium onion
    5 cups diced potatoes
    200g Lobster meat (cooked)
    1/4 cup cream
    1/4 cup milk
    325g raw haddock
    salt & pepper

Directions

Fry chopped onion in 1/4 cup of butter until onions are transparent. Season with salt and pepper. Add potatoes and enough water to just cover the potatoes. Cook until potatoes are tender. While potato mixture is boiling; in a frying pan melt 1/4 cup of butter. fry lobster meat until butter is absorbed. To lobster add milk and cream. Once potatoes are cooked add raw haddock. Once haddock is cooked mix in lobster and cream. Stir chowder so that meat is evenly distributed in chowder.

Serve with crackers or buns.

To make this a true seafood delight add scallop and shrimp.

Variation - instead of water add chicken bouillon, or water and a bouillon cube. Adds a fantastic taste, and I would never do a chowder without it now.
