Introduction

This is one of my specialties. It is not my recipe; I actually got it off the back of Knorr's Vegetable Soup Mix. For every party I am invited to I am requested to bring this dish...or stay home...LOL This is one of my specialties. Ingredients

    1 10 oz pkg of frozen chopped spinach, thawed and squeezed dry
    1 8 oz pkg 33% less fat cream cheese, softened
    3/4 cup Hellman's Light Mayonnaise
    2 cups Monterey Jack cheese, shredded
    1 pkg of Knorr's vegetable soup mix
    1 14 oz can artichoke hearts, drained and chopped
    1 8 oz can water chestnuts, drained and chopped
    2 tbsp minced garlic

Directions

Preheat oven to 350 degrees. Combine all ingredients except 3/4 cup of shredded cheese. Spoon into 2 quart casserole, then top with remaining cheese. Bake for 35 minutes or until dip is hot.
Makes 16 1/4 servings
