Introduction
This is a really simple chicken casserole which leaves you with quite a lot of sauce left over which can be used over pasta for another tasty dish. Ingredients

2 Chicken Breasts, boneless & skinless.
1 cup onions, chopped.
1tbsp tomato puree (paste)
1tbsp dried thyme.
3 rashers bacon, chopped.
1 can tomatoes.
1/2 - 1 cup chicken stock (use less stock for less sauce)
White rice (or rice of your choice)
Directions
Take 2 skinless, boneless chicken breasts and place into a casserole dish.
Fry 1 cup of chopped onion until soft, add 1tbsp of dried thyme and 1tbsp of tomato paste (puree) and cook for a minute.
Add 3 rashers of bacon, chopped and fry for a further 2 minutes.
Now add 1 can of canned tomatoes without juice.
Add 1/2 - 1 cup of chicken stock to the mixture then pour over chicken, cover and cook at a medium heat (gas 5) for 1 hour.
Serve with any kind of rice. I've only used white long grain rice.
