Ingredients

32 oz. canned pumpkin
1/2 cup Splenda Brown Sugar Blend
1/2 cup Promise Light
3/4 cup Egg Beaters
3 1/2 cup whole wheat flour
2 tbsp baking powder
1 tsp cinnamon
1/2 tsp salt
1/2 tsp nutmeg
2 cup walnuts
Directions
Preheat oven to 350 degrees.
Cream butter and brown sugar together.
Mix in pumpkin and Egg Beaters.
In separate bowl, combine dry ingredients.
Slowly add dry mixture to wet mixture.
Add walnuts if desired.
Spoon mixture into greased muffin pan.
Bake at 350 degrees for 20-25 minutes, or until you can insert a fork or toothpick and it comes out clean.
Makes 24 muffins.
