Introduction

Ingredients

    1 20oz. bag of 15 bean soup dried beans
    12 cups water
    1 Ham bone with about 1 1/2 c. of ham left on it
    1 bay leaf
    1 large onion, chopped
    2 cloves garlic, chopped
    1/2 c .celery, chopped
    1 28 oz. can crushed tomatoes
    1 c. carrot. chopped
    1 tb. cajun seasoning (more if you like, I use Essence of Emeril)
    1 tsp. salt
    1/2 tsp. pepper


Directions

Wash a drain the beans. Place in a large dutch oven and cover with 12 c. water. Add the hambone, bay leaf, onions, garlic, tomatoes, celery and spices. Bring to a boil. Reduce heat and cover, let simmer for an hour. Remove cover and let simmer an additional 2-3 hours until beans are tender. Add carrots, simmer an additional 20-30 minutes or until carrots are tender. Re-season to taste.

    This was a fantastic main dish dinner. Even my three year old ate it. Lots of veggies and great tasting broth. - 1/13/09

    LOL....I wish I could say the same. I'm the only one in my house that will eat it so I have to freeze some and send some up to my dad.
